Kim's Fruit Cake Recipe

Prep Time: 15 minutes
Cooking Time: 2 hours

Ingredients:

400g dried mixed fruit
1 mug hot black tea 1 mug soft brown sugar (see Tips below)
2 mugs self raising flour
1 beaten egg

Cooking Instructions:

Soak dried fruit overnight in hot black tea
Next day mix all the ingredients (including the tea) together
Place into a 800g loaf tin or round cake tin,
Bake for 2 hours at 160c, 325f or gas mark 3.
Serve hot or cold

Tips:

As an alternative why not try a fruit tea.
